- Le Relais de l'Entrecôte — Steak-frites, Saint-Germain (2). Order the Steak-frites, sauce secrète. One dish, one secret sauce, seconds included — no menu needed.
- Bistrot Paul Bert — Bistro, 11th arr. (3). Order the Steak au poivre + soufflé. The benchmark Paris bistro — steak au poivre and a Grand Marnier soufflé.
- Chez Janou — Provençal, Le Marais (2). Order the Chocolate mousse (help yourself). Pastis by the dozen and a chocolate mousse served by the bowl.
- Bouillon Chartier — Classic French, 9th arr. / Grands Boulevards (1). Order the Œuf mayonnaise + confit de canard. A 1896 workers' canteen still serving œuf mayo under gilded ceilings.
